Seafood, Seafood, Seafood!

Well, we spent Tuesday night in Seattle after picking up my sis Cindy and her better half Bruce flew into Seattle to spend a few days..anyway..we had a wonderful dinner with our cousin Teri who lives up there, and then Wednesday we went to Pike Market and checked out everything.

Well I did something I have never done before but always wanted to, and that is BUY FISH..Copper River King salmont fillets, to be exact..which are the prime of the prime of salmon from what I understand..Bruce bought a few dungeness crabs, I also picked up a Meyer Lemon for the salmon, some fresh green beans and I had baking potatoes here at the Cottage. Well, tonight we ate like Kings! I have never cooked salmon before, so I took my 9x13 glass pan, sprayed it all over with butter flavor Pam spray, then I placed the filet in the pan skin down, seasoned with salt and pepper, and sliced Meyer lemons on top. I placed the pan under the broiler and low broiled it for about 15 minutes. Served with the benas and potatoes and ssprinkled with lemon juice..Well, goodness..darn best salmon I have ever sunk my teeth into..we polished it all off..Bruce stood at the sink and cracked his crab and we just made pigs out of ourselves...but it was fun and we enjoyed every bite!

  1. Looks yummy! Salmon is the only fish I will touch. I bet it tastes amazing when it is fresh like that.

  2. Kellie, I am the same way, it was the most delicious salmon I have ever had, buttery, smooth..for what it cost, but it was worth it, Copper River is only available in May and June..try it if you ever get a chance..

  3. Chuck would be all over that but....sorry.....I'm not a big fish person. Eventhough it's good for you...I can't do it. It almost looks like San Francisco's Fisherman's Wharf. Bet you're excited about moving back. We had fun w/Scott and Lainie at breakfast. The graduation was fantastic.
